ERNEST “WAFFLE” ELLENDER, PHD 
Guerrilla Jiu-Jitsu Black Belt Head Instructor

Born and raised in Houma, Ernest spent his time hunting, fishing, and skiing in local bayous. He traveled extensively throughout his education, living in Europe, California and New York while obtaining his PhD in Clinical Psychology.  At age 27, he started studying Brazilian Jiu-Jitsu under Ralph Gracie in Mountain View, CA.  By 30, he had earned both his blue belt in Jiu Jitsu and the nickname “Waffle” due to his love of fine dining like that found at Waffle House.  He continued his training under Dave Camarillo’s Guerrilla Jiu-Jitsu, earning his black belt in 2008 after 8 years of heavy training.  In 2007, “Waffle” finished his studies and headed home to open the doors to Guerrilla Jiu-Jitsu of Houma (originally Evolution Training).

HEATH COOPER
Guerrilla Jiu-Jitsu Black Belt Instructor

Houma native Heath Cooper has studied grappling and striking arts for over 20 years, earning his black belt in Guerrilla Jiu-Jitsu in 2020. Heath is an impressive artist in addition to martial artist, and you will see some of his art displayed on the walls of our school and in our marketing graphics. Heath is just plain cool.

KAIESIE ALBARADO
GJJ Black Belt Instructor

Kaiesie Albarado studied San Shou Kickboxing from 2006-2009. He then began his career in Brazilian Jiu-Jitsu while also studying traditional Muay Thai (Thai kickboxing). Kaiesie tested his skills in the ring as well, fighting on 5 amateur MMA shows and another 5 Kickboxing events. He competed in Jiu-Jitsu regularly, including Super Fights once he had achieved advanced levels. As an instructor, Kaiesie began teaching Jiu-Jitsu and Kickboxing to both kids and adults in 2011. Since that time, he has actively sought out additional knowledge from various renowned instructors to further his broad base of martial arts skills. Kaiesie has earned certificates in Child Martial Arts Development and Kickboxing. He joined the Guerrilla Jiu-Jitsu Team in 2016, and he has rapidly become an integral part of our team of professional instructors.

KAT ELLIS
Women's GJJ Class Instructor

Kat Ellis began her martial arts training in the Women-only GJJ class in 2014. She has become one of Evolution Training's most dedicated students, and earned her position on our list of instructors when she rekindled the Women-Only Jiu-Jitsu program in 2021. Kat's weekly class offers the women (and teen girls) a focused and comfortable environment to learn the fundamentals of our beloved martial art!

ELTON TOOTLE  
Guerrilla Jiu-Jitsu Black Belt Instructor

Born and raised in Houma, Elton worked his way to the top of the construction business due to his attention to detail and his personal integrity in the business. His company, Coastal Construction, now builds residential homes and commercial businesses, as well as high-end cabinetry and granite work. He started studying Guerrilla Jiu-Jitsu from the beginning in 2008 and has been very successful competing in BJJ across the South. As a purple belt, he began teaching GJJ classes and has continued to develop his skills as both practitioner, competitor, and instructor. Additionally, he has traveled to California for advanced GJJ training directly under Dave Camarillo. He earned his Brown Belt in Guerrilla Jiu-Jitsu in 2015.

SCOTTY "BREEZE" SMITH, JR.
Guerrilla Jiu-Jitsu Black Belt Instructor

Breeze began studying Tang Soo Do (Karate) in 2002 at the age of 18. At 22 years of age, he began his Brazilian Jiu-Jitsu training and started competing in MMA a year later. In 2008, Scotty started training under “Waffle” and has since earned his purple belt in Guerrilla Jiu Jitsu. Scotty has put his MMA competitions aside (Current record: 6-0) and has been focusing intensely on advancing his Jiu Jitsu game through regular training, competitions, teaching, seminars, and traveling to train with whoever he gets the opportunity to train with. His rapidly growing list of competition accolades includes 2 LA State championships (at blue and purple belts) and 6 amateur MMA fights (all were first round submissions). Scotty’s progression as an instructor is as impressive as his competition record. Far from simply reiterating moves he has learned, Scotty consistently reworks and innovates new techniques and training drills. In November of 2015, Scotty became the first to earn his Guerrilla Jiu-Jitsu Black Belt through our academy here in Houma.
